(Hong Kong, 7 January 2014) Hong Kong Convention and Exhibition Centre (Management) Limited (‘HML’) is pleased to announce the appointment of Mr Tam Kwok-sing as Executive Chef – Chinese Kitchen.
Chef Tam will be responsible for operations of all the Chinese kitchens at the Hong Kong Convention and Exhibition Centre (‘HKCEC’). This includes overseeing Chinese banquets held at the HKCEC, along with the HKCEC’s two Chinese restaurants, the Golden Bauhinia Cantonese Restaurant and New Shanghai. He will also be in charge of staff training and development, and ensuring that menu design, food quality, food safety and hygiene all meet the best international standards.
HML’s food and beverage operations combine significant scale with exceptional quality. During the fiscal year 2012-2013, a phenomenal 2.45 million guests enjoyed food at the HKCEC’s 411 banquets, seven restaurants, and numerous concession stands. Of the banquets, 134 involved more than 1,000 guests at a sitting, with teams of Chinese chefs playing important roles in concocting a range of Chinese delights. “Whether we have to deal with one banquet serving a thousand guests or several banquets taking place at the same time, detailed planning of menu design and manpower is indispensable,” said Chef Tam. “I will use luxurious but healthy ingredients for the gourmet dishes, which will all be presented in the most attractive style. More importantly, ensuring that all dishes are served on time and taste delicious will be a priority. Many large corporations and associations choose to hold their annual gatherings at the HKCEC every year, so I will be continuing to introduce new combinations of ingredients, innovative cooking methods, and outstanding presentation techniques.”
Influenced by his family, Chef Tam showed talent in cooking from childhood and started his culinary career at the age of just 16. With 30 years of experience, he is now a master of Chinese cooking skills and gastronomic traditions. Chef Tam has held a number of senior positions in renowned hotel and restaurant groups in Hong Kong, Shenzhen, Tianjin, Shenyang, Guangzhou, the Philippines, and Dubai. He was an important member of the opening team of the Shang Palace at the Shangri-La Hotel in Paris, the first Shang Palace restaurant to be opened in Europe.
